    Excellent, just the sort of use I had in mind. It may be a little less salty than my tester chunk as I brushed each piece to remove the loose stuff before I vacced it.

    I reckon if I got the salt right it might take some chilli flakes or coriander. I like the beef and onion mix, it’s a natural marriage of flavour.

    Oh man, here was me thinking you'd ruined this with the salt; I've just had a taste and it's excellent. Great piece of meat underneath, too!

    Going down a treat with a bottle of Estrella, it does look like something out of a low budget museum, mind :P

    Arrived home early evening, to find the biltong had been delivered, and it had not eaten through the hall floor. :D

    Not only that, but, it is NOT salty.

    I am married to the Salt Police Chief, and even she had some, and said how good it is. This, from someone that does not usually eat biltong, because it is too salty.

    The flavour is spot on, IMO. A nice hint of spice, with a good beef taste.

    Please over-salt as much as you can, in future, Rick.
